1 cup basmati rice
2 cups water
1 onion (sliced)
1/2 cup mixed vegetables (carrot, peas, beans)
1 green chili (chopped)
1 teaspoon ginger-garlic paste
1 bay leaf
1 small cinnamon stick
2 cloves
1/2 teaspoon cumin seeds
2 tablespoons oil or ghee
Salt (to taste)
Fresh coriander leaves for garnish
Instructions
Wash the rice and soak it in water for 15–20 minutes.
Heat oil or ghee in a pan or pressure cooker.
Add cumin seeds, bay leaf, cinnamon, and cloves and sauté for a few seconds.
Add sliced onion and green chili and cook until the onion becomes golden.
Add ginger-garlic paste and cook for 1 minute.
Add mixed vegetables and cook for 2–3 minutes.
Add the soaked rice and water.
Add salt, mix gently, and cook until the rice is done (about 10–12 minutes).
Serving
Garnish with coriander leaves and serve hot with:
