Poha is a popular and quick Indian breakfast dish made from flattened rice, spices, and vegetables. It is light, healthy, and ready in about 15–20 minutes.

Ingredients

2 cups poha (flattened rice) 1 onion (finely chopped) 1 small potato (optional, chopped) 2 green chilies (chopped) 1/2 teaspoon mustard seeds 6–8 curry leaves 1/4 teaspoon turmeric powder Salt (to taste) 1 tablespoon oil 2 tablespoons peanuts Fresh coriander leaves Lemon juice (1 teaspoon) Instructions Wash the poha lightly in water and keep it aside for a few minutes to soften. Heat oil in a pan and add mustard seeds. Let them crackle. Add peanuts and fry for 1–2 minutes. Add onion, green chilies, and curry leaves and cook until onions become soft. Add potato pieces and cook for a few minutes. Add turmeric powder and salt. Now add the soaked poha and mix gently. Cook for 3–4 minutes on low heat. Add lemon juice and coriander leaves for flavor. Serving Serve hot with tea and garnish with extra coriander and lemon.
